Greek Salad

Greek Salad

(Salata Meze)

8 ounce - Green Beans
3 – Small Zucchini, cut into ½ inch slices
1 Small Cauliflower, separated into flowerets
½ Cup Olive or Vegetable Oil
¼ Cup Lemon Juice
1 Teaspoon Salt
½ Teaspoon Sugar
½ Teaspoon Dried Oregano Leaves
1 Clove Garlic, finely chopped
Lettuce Leaves
1 Small Onion, sliced and separated into rings
Cherry Tomatoes,cut into halves
Black Olives

In a 3 – quart saucepan add 1 cup water and ½ teaspoon salt.
Bring to a boil,add beans;cover and simmer 5 minutes.Then
Add zucchini and cauliflower.Heat to boiling;reduce heat.
Cover and cook just until tender,about 5 minutes.Drain.
Place vegetables in shallow dish.

Mix oil,lemon juice,salt,sugar,oregano,and garlic;pour
Over vegetables.Cover and refrigerate, spooning marinade
Over vegetables occasionally, at least 2 hours.
Drain vegetables and place on lettuce lined dish
Top with onion rings,cherry tomatoes and olives.
Also great with crumbled feta cheese

Fruit Salad

Fruit Salad


1 (20 ounce) can pineapple chunks, juice reserved
  • 2 apples, peeled and cored
  • 1 (21 ounce) can peach pie filling
  • 2 bananas, peeled and diced
  • 3 kiwis
  • 1 pint strawberries


  1. In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes.
  2. In a large salad bowl, combine the peach pie filling and pineapple chunks.
  3. Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes.
  4. Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
  5. Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together.
  6. Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.

Country Style Apple Dumplings

Apple Dumplings

1 1/3 Cup Flour.......................................................Sift together
1 1/2 Teaspoon Baking Powder
1/4 Teaspoon Salt

1/3 Cup Shortening................................................Cut in

1/4 Cup Milk...........................................................Add and blend into a soft dough.Roll into a soft
dough.Roll into a 12 - inch square and cut into
4 squares.

4 apples,cored and peeled.....................................Place one in each squares

4 Tablespoon Brown Sugar...................................Put 1 Tablespoon and white sugar into core
4 Tablespoon Granulated Sugar opening and over each apple,top with butter
Butter and sprinkle with cinnamon.Bring up corners
Cinnamon of dough and press to hold.Pinch edges together.

1 Cup Sugar.............................................................Combine and boil 5 minutes
1/2 Cup Water Place apple dumplings in buttered baking dish,
1/2 Teaspoon Cinnamon pour in syrup,and bake 400 degrees 30 - 35
minutes,until apples are tender and dough
browned.

Batter Fried Frog Legs

Cherokee Frog Legs

1 Egg -Beaten
1/2 Teaspoon Salt
2 Pounds Frog Legs
1/2 Cup Corn Meal
1/8 Teaspoon Pepper
1/2 Cup Cooking Oil

Mix the egg,corn meal,salt,and pepper together to form a batter.
Dip the frog legs into the batter,then fry in the oil in a large, heavy skillet for 25 minutes,turning so that they brown evenly on all sides. Makes 4 - 6 servings

Cherokee Huckleberry Bread

Huckleberry or Blueberry

2 Cups Self-rising Flour
1 Cup Sugar
1 Cup Milk
2 Cups Berries--Huckleberry or Blueberry
1 Egg
1 Stick Butter
1 Teaspoon Vanilla Extract

Cream eggs,butter,and sugar together.Add flour,milk,and vanilla.
Sprinkle flour on berries to prevent them from going to the bottom.
Add berries to mixture.Put in baking pan and bake in oven at 350 degrees
Approx. 40 minutes or until done.

I used to spend at least 8 hours every weekend
making sure things were just perfect --
"in case someone came over."
Then I realized one day that no-one came over;
they were all out living life and having fun!



Now, when people visit, I find no need to
explain the "condition" of my home.
They are more interested in hearing about
the things I've been doing while I was
away living life and having fun.
If you haven't figured this out yet,
please heed this advice.


Life is short. Enjoy it!

spend time with a friend

plant a seed, go play golf,
ponder the difference between want and need?

Oriental Beef

Easy Oriental Beef
1/2 Pound Beef Stew Meat
1 Tablespoon Cooking Oil
1/2 Cup Chopped Onion
1/2 Cup Dry White Wine
1/4 Cup Soy Sauce
1 Clove Garlic,Minced
2 Teaspoon Sugar
1/2 Teaspoon Ground Ginger
1 16-Ounce Can Tomato Wedges
1 6-Ounce Frozen Pea Pods
1 3-Ounce Can Sliced Mushrooms,Drained
2 Tablespoon Cornstarch

Cut meat into 1-inch cubes.In large skillet brown meat in hot oil.Remove from heat.Add the onion,wine,soy sauce,garlic,sugar,ginger,and 1 cup water.Cover and simmer 1 1/2 hours.
Add undrained tomatoes , frozen pea pods,and mushrooms.
Bring to a boil;cook and stir,uncovered,2 to 3 minutes or till pea pods are crisp-tender.
Slowly blend 1/2 cup cold water into cornstarch;stir into hot mixture.
Cook and stir till thickened and bubbly.
Serve over hot cooked rice.
Makes 6 servings

Easy No - Cook Divinity


This Never Fails

1 Box Fluffy White Frosting Mix
1/3 Cup White Karo Syrup
1/2 Cup Boiling Water
1 Teaspoon Vanilla
1 Pound Powder Sugar
1 Cup Chopped Nuts

In small bowl,combine dry frosting mix,corn syrup,vanilla and boiling water.Beat at highest speed until stiff peaks form,about 5 minutes.
Pour into large bowl and on low speed blend in powder sugar gradually.Stir in nuts.
Drop by teaspoonful on wax paper , press down a little.When outside of candies feels firm turn them over,place half a pecan on each candy.Allow to dry 12 hours or overnight.Store in airtight container with waxed paper between layers.

This Is A Must Have On Holidays

1 - Can Eagle Brand Milk
1 - Stick Butter
2 - Boxes Confectionery Sugar
1 - Can Coconut
1- Quart Pecans -Chopped ,save some to top or have extra pecans
1 - 12 oz. pk. Semi - Sweet Chocolate
1 - 4 oz. pk. Paraffin Wax

Mix milk and butter in bowl,add sugar gradually.then add coconut and pecans.
Roll into small balls, lay on wax paper lined cookie sheet-put in freezer-about 10-15 min.
Melt wax and chocolate over very low heat.Use a wooden skewer in the balls to dip them in the chocolate mixture,then place each on wax paper until firm.Enjoy

1 Box Hines Butter Cake Mix
4 Eggs
1/2 Cup Oil
1 Can Mandaren Orange Slices

Mix well , line 3 cake pans with parchment paper.Bake at 350 for 30 - 35 minutes use tooth pick or skewer to check if it is done. Let cool completely

Filling:

1 Large Container of Coolwhip
1 Large Box Instant vanilla Pudding
1 Large Can Crushed Pineapple

Mix together well,let it set in the refrigerator 15 - 20 minutes

Ice each layer , side and top. Mom said now dig in !

Beth's Chicken Spaghetti

Chicken Spaghetti-In Slow Cooker

3 lbs. - Chicken Fryer-cut up or use chicken breast,legs or thighs

2 pk. - Spaghetti Sauce Mix (dry)

Parmesan Cheese - Fresh Grated or Jar

Spaghetti Noodles

Place chicken in slow cooker then sprinkle mix over the chicken,cover and cook on Low 6-8 hours or High 4-5 hours.Cook pasta according to package.Serve by pouring sauce over pasta and top with parmesan cheese . This can also be frozen into individual meals ,when you need something quick and easy.

Deb's No Bake Cookie Recipe


Great For Busy Days
2 cups sugar
4 Tablespoon coco
1/2 cup butter
1/2 cup milk

Mix above ingredints,then boil for2 min.

Remove from heat and

add 1/2 cup of peanut butter

Stir until melted

Add 3 cups of quick cooking oatmeal,

stir in 1 teaspoon vanilla

Press out on to a cook sheet,let cool and cut into squares

Can also be dropped by spoonfuls on wax paper

Nelda's Layered Shrimp Salad

This salad can be made to serve two or twenty
First pick the right bowl to layer the ingredients.Start with boiled shrimp drained and cooled,as much as you would like.Then add shredded lettuce.Add cooked drained and cooled elbow macaroni.Then add purple onion,grated cheddar cheese,green bell pepper to taste.Add frozen peas,diced or sliced tomatoes.
Dressing
Blend 1 cup mayonnaise to 1/2 cup Zesty Italian dressing.
Pour enough to cover top of bowl.
Cover with lid or plastic wrap,can be kept over night.
When ready to use stir if needed add more dressing.

Easter Egg Cake



Fun With Grandson


My youngest grandson and I enjoyed Good Friday making this Easter Egg Cake,It's chocolate with cream cheese frosting covered with coconut.
He helped mix and bake the cake and decorated the grass with gummy rabbits , jelly beans, and plastic eggs.
Wow ! What a Great job for a 4 year old.
This made it the Best Good Friday ever.

Diabetic Barbecued Chicken

Barbecued Chicken


3 lbs. chicken pieces

1 small onion

1/2 cup tomato sauce

1/2 cup nonfat plain yogurt

1 tsp. fresh ginger, chopped

2 garlic cloves

2 tsp. coriander

1/2 tsp. cayenne pepper (optional)

2 whole cloves

1 tsp. cumin seeds

4 cardamom pods

1 tsp. salt

Remove the skin and all visible fat from the chicken pieces. (I often have the butcher skin the chicken.) Cut 2-3 slits, 1 inch long and 1/2 inch deep, in each piece of chicken. Place in a casserole dish and set aside. Cut onion into 4-5 pieces. In a blender jar put onion, tomato sauce, yogurt, ginger, garlic cloves, coriander, cayenne pepper, cloves, cumin seeds and salt. Blend to a smooth paste. Pour the paste on the chicken and turn pieces to thoroughly coat with spices. Cover with a lid or plastic wrap and marinate in the refrigerator 4-24 hours. Preheat oven to 400�F. Remove chicken pieces from the marinade, saving marinade. Arrange pieces in a broiler pan. Bake uncovered in the middle of the oven for 30 minutes. Turn pieces over and brush with remaining marinade. Bake for 10-15 minutes until chicken is tender. Turn oven to broil. Turn pieces over once again and broil for 5 minutes. Transfer to a serving platter. Serve with lemon wedges or squeeze lemon juice over the chicken before eating, if desired.

MOM'S INCREDIBLE CARROT CAKE


CARROT CAKE
2 c. plain flour
2 t. soda
1 t. salt
4 eggs
2 c. sugar
2 t. cinnamon
1 1/2 c. oil
3 c. grated carrots,food processor helps greatly with this task.

Combine flour,sugar,soda,cinnamon,salt.Add oil and eggs.Beat well.Add carrots.Place in 2 or 3 greased pans.Or lined with parchment paper.Bake at 350 for 30-35 minutes.

ICING
1 stick butter
1 box confectioners sugar
2 t. vanilla
8 oz.cream cheese
1 c.or more of chopped nuts.

Cream together butter and cheese.Add sugar gradually.Add vanilla and pecans.Spread between layers and on top layer of cake. Enjoy

It's True !

About 1982 I made a visit to my Doctor and informed him that I believe I had broken my Big Toe. He told me it was just the gout!The word Just does not describe the word Gout.It was so painful I could not walk on it.A few years later a Older Gentlemen told me to eat 6-8 Cherries a day,and that Black Cherry Juice worked as well. "And It Works"

Breaded Tofu Nuggets


  • 1 block firm or extra-firm tofu, pressed
  • 1/3 cup soymilk
  • 2 tbsp mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp nutritional yeast (optional)
  • 3/4 cup bread crumbs

PREPARATION:

Whisk together the soymilk, mustard, nutritional yeast and spices until smooth in a wide bowl. Place bread crumbs in a separate bowl. Coat each piece of tofu with soymilk and mustard mixture first, then coat with bread crumbs.Fry in oil until golden brown, serve with ketchup, barbeque sauce or other dipping sauce and enjoy!

For a lower fat alternative, lay tofu piece on a covered baking sheet and bake at 350 degrees for 25 minutes, turning once, until golden brown.

Vegetarian Black Bean Burgers

  • 1/2 onion, diced
  • 1 can black beans
  • 1/2 cup flour
  • 2 slices bread, crumbled
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp seasoned salt
  • salt and pepper to taste
  • oil for frying

PREPARATION:

Sautee the onions till soft, about 3-5 minutes.

In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well. Mixture will be thick.

Form bean mixture into patties, approximately ½ inch thick and fry patties in a small amount of oil until slightly firm. Make veggie burgers and enjoy!

  • 6 skinless, boneless chicken breast halves
  • 1 (28 ounce) jar spaghetti sauce
  • 2 green bell pepper, seeded and cubed
  • 8 ounces fresh mushrooms, sliced
  • 1 onion, finely diced
  • 2 tablespoons minced garlic

DIRECTIONS

  1. Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion, and garlic.
  2. Cover, and cook on Low for 7 to 9 hours.
  3. Serve over Angel Hair Pasta

Banana Nut Bread


Banana Nut Bread
3 large or 4 small ripe bananas

1/2 c. shortening

1 c. sugar

2 eggs

2c. flour

1 t.soda

1 t. salt

1 cup chopped nuts

Cream sugar and shortening. Add well beaten eggs,then flour,soda and salt which has been sifted together. Add nuts and well mashed bananas.
Bake 1 hour at 350 degrees in loaf pan
Or 30-35 min. in muffin pan. Test with toothpick to check if done.Enjoy!

Pecan Pralin Snacks


2 cups Whole Pecans
1/2 cup Packed Light Brown Sugar
4 tablespoons Heavy Cream



Preheat oven to 350 degrees F.

In a medium bowl, combine all ingredients.

Spread into a square baking pan, sprayed with cooking spray.

Bake in the preheated oven for about 20 minutes, or until coating is dry, and slightly crystallized, stirring once.

Remove from oven to cool and stir once more. If not serving immediately, store in an airtight container.

Double Chocolate Delite Brownies


2 eggs
1/2 teaspoon salt
1 cup sugar
1 tablespoon pure vanilla extract
1 stick margarine
3 ounces unsweetened chocolate chopped
1/2 cup all-purpose flour

Chocolate ganache for topping, recipe follows

Special equipment: 9-inch round foil cake pan
Preheat oven to 350 degrees F.

Using a hand held electric mixer, beat the eggs and salt together in a large mixing bowl until frothy. Add the sugar and beat until the eggs are thick and pale yellow, about 2 to 3 minutes. Add the vanilla extract and beat an additional 30 seconds.

Put the margarine and chocolate in a microwave safe container and microwave on high for 1 minute. Stir to insure that the chocolate has melted. Microwave an additional 30 seconds, if needed.

With the mixer running, pour the melted chocolate into the egg mixture. Add the flour and beat 1 minute. Scrape down the sides of the bowl and beat an additional 30 seconds.
Spray the cake pan with a pan release spray and pour in the brownie batter. Place the pan on the top rack of the oven and bake 15 to 20 minutes until the center is barely set.* Remove the pan from the oven and let cool.

Top with the ganache and place in the freezer for at least 1 hour.

To serve, remove from freezer and slice immediately.
Allow to come to room temperature before serving.
*Cook's Note: If tested with a toothpick the center will still be gooey. If tested by touch, the center will be soft. It will set once frozen.

Chocolate Ganache:
1/2 cup (4 ounces) semisweet chocolate chips
1/4 cup heavy cream

Put the chocolate chips and cream into a microwave safe bowl. Microwave on high for 1 minute. Remove the bowl and stir with a whisk or fork until well mixed. Use immediately. If using the ganache later it will need to be reheated.
Yield: 3/4 cup

Chicken Pasta Casserole

Quick and Easy Casserole

2 Pounds cooked Chicken--Grilled,Broiled,boiled,Fried,remove skin after cooked

2 10.5 Cans of Condensed Cream of Chicken Soup

1 1/2 Cans Half and Half and 1/2 can of water--use soup can to measure

Salt and Pepper to taste

1 Bag Capitanelli Rotini Pasta

In large microwaveable bowl pour soup into it,then add liquid small amount at a time,mix well.

Add cut into small bite size cooked chicken and mix. Heat uncovered about 8 minutes.

Bring 4 Quarts of Water to a hard boil , then add Pasta,cook 8 minutes,drain.Add all but 2 Cups

of Pasta to chicken mixture , mix well and microwave for 2 more minutes.

Serve plain or sprinkle shredded cheese on top.


The extra pasta can be used to make a salad for the next day.

Add boiled eggs,onion,pickle relish,mustard and mayonnaise to taste,mix well.

Colorful Corn Salad

Corn Salad

1 2/3 Cups Frozen Whole Kernel Corn
1 (4-ounce) Jar Diced Pimiento,Drained
1/2 Cup Chopped Green Pepper
1/4 Cup Chopped Green Onions
1 Tablespoon Sugar
2 Tablespoon Cider Vinegar
1 Teaspoon Celery Seeds
2 Teaspoon Vegetable Oil
1/4 Teaspoon Salt

Cook corn according to package directions,
omitting salt.Drain well,and let cool.
Combine corn,pimiento,and remaining ingredients in a medium bowl,stirring well.
Cover and chill salad at least 3 hours.
Yield: 4 servings

Cantaloupe-Blueberry Salad

A Great Low-Fat Salad

1 (8-ounce) carton vanilla low-fat yogurt
1 Tablespoon Lemon Juice
1 1/2 Teaspoon Poppy Seeds
1 Teaspoon Grated Orange Rind
1 Medium Cantaloupe,peeled and seeded,chilled
24 Boston Lettuce Leaves
2 Cups Fresh Blueberries,chilled

Combine first 4 ingredients;stir well.Cover and chill throughly.
Cut cantaloupe lengthwise into 32 slices.
Arrange 4 slices on each of 8 lettuce-lined serving plates;top each with 1/4 cup blueberries.
Spoon yogurt mixture over salads.
Yields:8 servings

Crabmeat Pie

Crabmeat (Frozen Broccoli or Tuna) Pie

1/2 Cup Mayonaise

2 Tablespoon Flour

1/2 Cup Milk

1 2/3 Cup Crabmeat or 7 1/2 ounces Tuna or 8 ounces Frozen Broccoli-chopped

8 ounces Cheddar Cheese

1/3 Cup diced Green Onion

Choose Crabmeat,Tuna or Broccoli, then mix other ingredients.

Pour in a unbaked pie shell,bake at 350 degrees 40-45 minutes

Insert knife in center,done if comes out clean

Barbeque Shrimp

Quick and Easy

1/2 Pound Butter

2 Dozen Shrimp

1 Teaspoon Pepper

1 Teaspoon Salt

1/2 Cup Worchestershire

2/3 Cup Ketchup

1 Teaspoon Garlic

Simmer Butter and Shrimp 5 minutes

Then add other ingredients and simmer 7 minutes.

Great served with rice

Helpful Hints for Sticky Rice

No More Sticky Rice

Here is the trick to the perfect rice,

Melt 1 tablespoon Butter in frying pan,I prefer a non-stick pan.

Add 2 Cups of Rice and saute on Medium heat ,
stirring often to get the butter and rice mixed well and cooked evenly,until rice looks clear,(transparent)

Add 4 Cups of Water bring to a boil,

then cover with lid and reduce heat to medium low,do not stir rice at this point,
cook until all water is absorbed .

I like to make extra rice so the next day I can make a Stir-Fry


I like to keep a bag of Stir-Fri Veggies in my freezer for a side dish,or a whole new meal.


Just add any extra chicken , beef or pork to veggies

and serve over rice.

TIP : To store rice or pasta and keep it from clumping or sticking

together put it in a ziplock bag.It really works !

Pineapple Upside Down Cake

You decide the flavor of the cake

1 Box Betty Crocker Butter Recipe Yellow Cake Mix
1 Stick or (1/2 cup) Butter -melted
20 oz. Crushed Pineapple-drained and reserve liquid
16 oz. Maraschino Cherries-drained and reserve liquid
1/2 cup Dark Brown Sugar-packed
1 cup Walnuts or pecans-finely chopped

Preheat oven at 350 F.
Line a 9 x 13 inch pan with parchment paper
Pour melted butter evenly in bottom of pan
Place about 36 maraschino cherries randomly all over the bottom ,do the same with the drained pineapple,nuts then the brown sugar .

Cake Mix-follow directions on package.Expect when it calls for 1 1/4 cup of water,this is where you decide what flavor of cake you would like.You can use water or the reserved pineapple liquid with water or cherry liquid to equal 1 1/4 cups. Beat 2 min. or until well blended.Pour into pan evenly.Bake 35 -45 min.Insert knife in center,if comes out clean,cake is done.While still warm,place plate or carrier on cake,hold on to both and flip over,remove pan then parchment paper . Let cool,garnish with remaining cherries and parsley (optional) Enjoy

Heavenly S'more Brownies

Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt

Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour

Topping:
4 cups large marshmallows

Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.

For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Easy Red Velvet Cake


1box Betty Crocker® SuperMoist® German chocolate cake mix
1 1/4cups water
1/2cup vegetable oil
3eggs
1bottle (1 oz) red food color
1tablespoon unsweetened baking cocoa
Frosting
2oz cream cheese, softened
2teaspoons milk
1 1/2cups whipping cream
1/2cup powdered sugar

Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottom and sides of 13x9-inch pan or two 9-inch round cake pans and lightly flour, or spray with baking spray with flour.Or line bottom and sides with parchment paper.
.In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
.Bake as directed on box for 13x9-inch pan or 9-inch rounds. Cool completely.

In chilled large bowl, mix cream cheese and milk until smooth. Beat in whipping cream and powered sugar with electric mixer on high speed, scraping bowl occasionally, until soft peaks form. Frost top of 13x9-inch cake or fill and frost cake layers. Store in refrigerator.

Cream Cheese Pound Cake


3cups Original Bisquick® mix
1 1/2cups granulated sugar
1/2cup Gold Medal® all-purpose flour
3/4cup butter or margarine
1teaspoon vanilla
1/8teaspoon salt
6eggs
1package (8 ounces) cream cheese, softened

Powdered sugar, if desired



Heat oven to 350°F. Grease and flour 10-inch angel food (tube) cake pan, 12-cup fluted tube cake pan or 2 (9x5-inch) loaf pans.Or use parchment paper as a liner.


Beat all ingredients except powdered sugar in large bowl on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.


Bake 55 to 60 minutes or until toothpick inserted near center comes out clean. Cool 5 minutes; turn pan upside down onto wire rack or heatproof serving plate.
Remove pan; cool cake completely.
Sprinkle with powdered sugar.

Old Time Chocolate Fudge


3 cups sugar
4 heaping tablespoons cocoa
3 tablespoons light corn syrup
1 cup evaporated milk
6 tablespoons butter, plus extra for buttering dish
1 cup chopped pecans
1 1/2 teaspoons vanilla extract

Mix sugar and cocoa; add syrup and milk.
Cook in saucepan over medium heat until a small drop forms a soft ball in cold water (234 to 240 degrees F on a candy thermometer). Remove from heat.
Add butter, pecans, and vanilla. Beat with mixer or by hand. Pour into a slightly buttered oblong glass dish and cut into squares. Work fast, as mixture thickens quickly.

POUND CAKE

POUND CAKE
1 c. butter
5 eggs
1 2/3 c. sugar
2 c. cake flour
1 t. vanilla


Cream butter thoroughly.Gradually add sugar and continue to cream.Add eggs
(one at a time). Beat after each egg.Add flour gradually.Add vanilla.Line tube pan with parchment paper.Pour in batter,bake at 350 for 1 hour or until cake leaves sides of pan.Turn out on plate,remove pan and parchment paper.
GLAZE
Mix 2 c. sugar,2 T. hot water,2 T. melted butter,then add a small amount at a time-up to 1/3 c.water together and pour over cake while still warm

CAKES with OLD FASHION FLAVOR

ANGEL FOOD (SELF- FROSTING)

1/2 c. cake flour 1/2 t. cream of tartar
6 T. sugar 6 t. sugar
2/3 c. egg whites 1/8 t. almond extract
1/8 t. salt 1/2 c. coconut

Sift flour four times with 6 tablespoons sugar.Beat egg whites with salt until frothy;add cream of tartar and beat until stiff.Add remaining sugar,one tablespoon at a time,beating to blend.Add flavoring.Sift half of flour mixture over top;fold in lightly.Add last of flour and fold in thoroughly. Pour into parchment paper lined -ungreased 9 inch square pan.Sprinkle with coconut.Bake at 325 30-35 minutes.Stick toothpick in center of cake,when toothpick comes out clean cake is done.Turn out on flat plate,remove pan and parchment.Enjoy
