MOM'S INCREDIBLE CARROT CAKE


CARROT CAKE
2 c. plain flour
2 t. soda
1 t. salt
4 eggs
2 c. sugar
2 t. cinnamon
1 1/2 c. oil
3 c. grated carrots,food processor helps greatly with this task.

Combine flour,sugar,soda,cinnamon,salt.Add oil and eggs.Beat well.Add carrots.Place in 2 or 3 greased pans.Or lined with parchment paper.Bake at 350 for 30-35 minutes.

ICING
1 stick butter
1 box confectioners sugar
2 t. vanilla
8 oz.cream cheese
1 c.or more of chopped nuts.

Cream together butter and cheese.Add sugar gradually.Add vanilla and pecans.Spread between layers and on top layer of cake. Enjoy

Yes, have you ever herd of a pineapple upside down cake? My mother USED to make this for me bu has NOT in a while. Do you know how to make it?

Yes I do have a recipe for pineapple upside down cake.This is one of my recipes that i do not have written down.Please give me a day or two in order to make one,and be able to give you the measurements of all the ingredients.Mothers bake with Love But I believe you'll enjoy this moist and flavorful cake.
